So yesterday I went down to PP and got on the pill, and they reccomended I do a Sunday start after my period begins. But the thing is, even if it was regular at the moment, I'm not due to start for maybe another 2-3 weeks. So I was wondering if it would be okay to go ahead and start taking them about now. Would they still be just as effective after one cycles time as BC? Or could I end up with some nasty side-effects for starting it at a different time?

There's no reason you can't start today, and no matter when you start, you can count on them being effective after one full cycle.
