Are there different stages of arousal? I know there are different parts of sexual response, but I'm wondering just about that part of it. For example, sometimes I will get very wet when I'm with my boyfriend and feel kind of enlarged, but I don't really want to have sex.

Yes, there can be many different stages in arousal. During the course of any sexual encounter, both male and female participants can find their arousal increasing and decreasing over time. Erections can soften and harden, and vaginal lubrication can be more or less as the encounter progresses.
Also, it is possible for you to notice your body becoming aroused (ie. producing extra lubrication, etc) when you don't really "want" to have sex. It's kinda like a the way men sometimes have spontaneous erections.
