My gf just recently got a period that confused even her. It lasted only 2.5 - 3 days and consisted of brown slow flow with a spot of red at the end. She took two pregnancy tests that showed negative, so that's ruled out.

Could this have been caused by stress? She's been under quite a lot lately. Also, was that actually her period or should she be expecting it to return later in the month?

Stress can absolutely alter the menstrual cycle.

If this came at the time she would ordinarily expect her period, then there's nothing to suggest that it wasn't a period. Periods can change from time to time in how long they are, when they come, what the flow is like, etc.

Yeah it came maybe a day or two earlier than expected and only lasted like a day or two. Guessing she's just stressed by grades and such.

It's normal to have a couple of days' variation in when periods arrive, either earlier or later. As Robin said, stress can do a number on the menstrual cycle, so it's not really that surprising if she's been stressed that her period was different this month.
