For the last two days or so, I've had intense itching in/around my vulva, labias, and clit, and at the base exterior of my vagina. However, I don't think it's a yeast infection because it doesn't hurt or burn at all and I have no discharge. Everything looks relatively normal but I can't help but wonder if things look a little ... engorged? A little larger and more prominent than usual.

When I scratch and use toilet paper after peeing, it feels really good, only because the relief is so strong. I had vaginal intercourse with my boyfriend and it felt absolutely amazing because I've been so itchy.

Any idea what this could be? My vaginal area doesn't look any different and I can't find any other sources of irritation. I am on the last few doses of antibiotics for a tonsillitis bout, but I also have been taking probiotics to prevent a yeast infection.

Given you've been taking antibiotics, and probably a cillin variety for your tonsils, this most likely is a vaginal imbalance of yeast or the start of a yeast infection.

Probiotics are a good help to avoid that, and ultimately, besides eating well and avoiding culprits associated with yeast -- sugars, booze, caffeine, etc. -- they're really all you can do.

I'd just keep an eye on it over the next couple days: if it stays like this or gets worse, I'd call into your healthcare provider.
