I am 21 days into my first pack of birth control pills and haven't missed any, yay! However, I am a little confused about the seven placebo pills... Am I still protected against pregnancy while taking them, even though they don't contain any hormones?

Yep. That is when you get your withdrawal bleed. (You're "period" while on the pill.)

How do birth control pills really work, even during the placebo period?
