I find that some months I have oceans of discharge (of normal colour, consistancy etc), and then other months I am dry, dry, dry. My period is irregular, and I do skip some months, my doctor is aware of the period skipping, but I just wanted to make sure I shouldnt be concerned with the discharge variations!

As long as the discharge isn't oddly-coloured or textured, then you should be fine. Discharge, as well as periods, go through irregularities: nobody's going to have exactly the same amount of discharge every month! Sounds like just normal variations to me.
If you haven't read it yet and would like to brush up on discharge, here's a handy article: Honorably Discharged
